Potato and leek cream soup with OWOLOVO APPLE mousse

  • 1 leek
  • 2 potatoes
  • 2 tbsp butter
  • 1 l vegetable bouillon
  • 1 tsp thyme
  • 200g OWOLOVO APPLE mousse
  • salt
  • pepper

Slice the white part of the leek.
Peel the potatoes and cut into small cubes.
Melt the butter in a large pot. Add the potatoes and fry up for 5 minutes. Add the leek and stew for a further 10 minutes.
Pour the broth over the fried vegetables, add the thyme and cook for 30 minutes.
After this time, add the OWOLOVO Apple mousse, season with salt and blend thoroughly.
The cream can be served with croutons or cream.
